Ratatouille and Ratatouille


Last night Ellen came over to watch the movie Ratatouille and to eat ratatouille!

Ratatouille is an animated Pixar movie about a precocious rat named Remy who dreams of being a chef in a Parisian restaurant. The movie tells how Remy fulfills his dream.

The dish ratatouille is a prominent feature of Remy's cuisine. To accompany the movie Ratatouille, therefore, I made the dish ratatouille, along with some biscuit bread. Below are the ratatouille recipe and the biscuit bread recipe I used.

RATATOUILLE

1/4 cup coconut oil
2 cloves garlic, crushed
1 large onion, chopped thin
12 brussels sprouts, quartered and lightly steamed until slightly tender
2 carrots, sliced and lightly steamed until slightly tender
1 small eggplant, cubed
2 yellow squash, cubed
4 tomatoes, chopped
Meat of 3 chicken breasts, chopped
2 teaspoons salt
2 teaspoons parsley
2 teaspoons basil
1/2 teaspoon oregano
1/2 teaspoon rosemary
1/4 teaspoon thyme
1/4 teaspoon sage

Warm coconut oil in large saucepan over medium heat. Add garlic and onion, stirring frequently, until softened (about 6 to 7 minutes).

Add eggplant and yellow squash. Cover and cook for about 10 minutes, stirring occasionally.

Add lightly steamed brussels sprouts, lightly steamed carrots, tomatoes, chicken, salt, and herbs. Cover and cook over low heat for another 15 minutes, stirring occasionally.

Serves 6 to 8.

BISCUIT BREAD

1 cup white flour
1 cup spelt flour
3 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon sugar
1/4 cup coconut oil
3/4 cup soy milk
2 eggs, beaten

Mix together the dry ingredients: white flour, spelt flour, baking powder, salt, sugar.

Heat coconut oil and soy milk in small saucepan until just lukewarm. Remove from heat.

Beat eggs and add to warmed coconut oil and soy milk, then quickly pour over dry ingredients and mix well.

Pour batter into greased and floured pan: 9-inch round pan, 9-inch square pan, or 9 x 5 x 2-inch bread pan.

Bake at 350 degrees for about 20 minutes. Serve warm.

The ratatouille and the biscuit bread will make a delicious and hearty meal! Enjoy!

  2. Janet, yes, you can make ratatouille without brussel sprouts. Just leave them out.

    The vegetables called for in the original recipe are garlic, onion, eggplant, squash, bell pepper, tomato - no meat. I have a friend who doesn't eat bell pepper, so I omitted the bell pepper, and added brussel sprouts, carrot, and chicken.

    You can also vary the spices.

    The eggplant has little seeds.
